Laws on Pulque

Ley de pulques explicada (Impuesto sobre aguamiel y productos de su fermentación)

Notes: A summary of the laws and regulations governing the production and sale of maguey (agave) sap and the pulque made from it. This book covers taxes, sanitary regulations, restrictions on the sale of pulque, and rules for the retail sale of pulque, aguamiel (raw sap), and tlachique (an intermediate product).

Pulque is a traditional fermented alcoholic beverage from central Mexico. It is made by fermenting maguey sap into a low-alcohol product akin to beer (tequila and mezcal are made by fermenting the roasted heart of the agave and then distilling it).
