Notes: A very scarce hardcover pamphlet identifying twenty-five steps for the manufacture of the starter ("semilla", meaning seed or mother) for pulque, the fermented sap of the maguey (agave), a popular traditional beverage dating back a thousand years in Mexico.
This pamphlet offers advice for creating new semillas, fixing ailing ones, cleaning the "tinas" or fermentation vats, and tips on harvesting the sap (aguamiel) from mature maguey plants. There are very few published sources on the production of pulque prior to the Mexican Revolution.
